SERVES 4
4 chicken halves
Salt and pepper to taste
¼ cup extra virgin olive oil
4 cloves garlic, whole
Small bunch of mixed herbs (rosemary,sage, basil and italian parsley)
½ cup porcini mushrooms
½ yellow onion, sliced
2 tablespoons truffle oil
3 cups chicken broth
4 tablespoons unsalted butter

PREHEAT OVEN TO 400 DEGREES F. Rub chicken with salt and pepper, olive oil, garlic and herbs. Place chicken in a roasting pan and roast for about 35 minutes. Remove chicken from oven and add the remaining ingredients to the pan. Place the chicken on top of  the ingredients and continue roasting until chicken is moist and tender. Save the pan juice to pour on top of chicken prior to serving.
