Spicy arugula is set off by crisp, juicy Asian pears and sweet pistachios. Santa Barbara Pistachio Company sells the nuts and oil at the Farmers Market. Ossau-Iraty is a sheep’s milk cheese from the Basque region. You can also use Pecorino Toscano.
Ingredients – Serves 6
8 cups arugula, trimmed and washed
2 chilled Asian pears, peeled and sliced
2/3 cup roasted pistachio meats, coarsely crushed
4 oz Ossau-Iraty, shaved
1 ½ oz pistachio oil (Santa Barbara Pistachio Co.)
½ oz fresh lemon juice
1 Tbs. minced parsley
Salt
Pepper
Process
Chill 6 salad plates. Make a light dressing with the pistachio oil, lemon juice, salt, pepper, and parsley. Toss the arugula in the dressing. Mound on the plates. Arrange the pear slices, shaved cheese and pistachios on top. Serve.
